oatmeal kiss pancakes & being lazy

winter break is the bomb-diggity.
my activities as of the past few days have been as follows:
-hibernate (sleep/nap/act dead in bed)
-bake
-eat
-watch Dexter
repeat.

self-explanatory deliciousness, no?
it's been wonderful & lazy, to say the least. 

This morning i got dressed before 12pm (who am i?), so i decided to make pancakes.

Oatmeal Kiss Pancakes, to be exact. 
heck yes.

 they're healthy and delicious.


and they have hershey kisses in them.
so what more could you want, really?

ingredients (makes about 7-10 mini-pancakes):

  • 1/3 cup rolled oats
  • 2/3 cup all-purpose flour (whole wheat would be good too!)
  • 1/2 cup buttermilk 
  • 2-3 tbsp greek yogurt
  • 1 egg 
  • 1/2 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 2-3 packets truvia
  • hershey kisses (about 5, cut into smaller pieces)




sift flour + salt into mixing bowl w/ oats. 
whisk in buttermilk, egg + vanilla. add greek yogurt as needed to reach desired consistency. 
add truvia (or sugar, of course) and chopped up kisses.
spray pan w/ no-stick vegetable spray. place in spoonfuls on griddle on low-medium heat. flip when bubbles appear. add desired condiments ( i used almond butter+maple syrup)

I have a few more insightful (read: non-baking) post waiting for ya'll. For now, i just wanted my blog to affect the ways i've been spending my days- that is, lazily. :)

  1. Those look great! I might have to step it up from my microwave m&m pancakes I make every night haha. Maybe if we get the "ice storm" they are predicting this weekend, I'll make some real pancakes.

    resting after the holidays is a necessary evil, a BLESSED evil, so enjoy.

    If I didn't have to go to work I'd be baking pancakes in my sweats and watching TV (I'm wrapping up season 6 of Lost currently) too.

  3. woww! girly, those P-CAKES look amazing! :] and love that they are cute and mini! the ingredients sound so perfect and love the toppings you added! I need you to be my personal baker, deal? ;] i am not quite the baker, yet i wish to make pancakes one of these days.
    Sounds like your enjoying lazy snowy days! Love it! I am spending my time being lazy too! some art projects, writing, and drinking tea. Starbucks trips galore ;]
    but i get super restless being home all day.. so i always make an attempt to go somewhere, even if it's supermarket lol.

    I've been having a love-hate relationship w/ these past few snowy & lazy days! I love being home and just doing art, watching movies and aimlessly browsing through the wonderful world of flickr, tumblr and blogs ;P lol + resting and napping! hmm..shows that i love idk top chef is always a fav and real house wives of OC is addicting!! + Madmen re-runs(fav.show!)

    Before I read through, I thought you just gave your oatmeal pancakes a lovely name :P I didn't realize they had actually kisses in them.. that's awesome! I prefer more of a bittersweet chocolate in my baking, but kisses are wonderful :)

  15. Dexter is freaking amazing...i like flip a shit when the credits come on at every episode cause i don't want it to be over. ha.
    and i'll tell you a secret- i actually only used hershey kisses because i was out of normal chocolate chips- shhhhh! don't tell ;)

  17. Oh how I dream of a lazy day. But even on vacation here in San Francisco my "lazy day" was spent entertaining Ali and Maya for 10+ hours. I kind of want to be at home so I can relax. :)

    Favorite show to be lazy with...Real World/Road Rules Challenge on MTV. I can't believe I still watch that show but I do. And I LOVE it.
